What's for Dinner?

A long time ago in a place far far away lived a little family of five.  There was a husband and daddy that was a busy pastor.  There were two little girls and a baby boy.  Oh yes, and there was the mom.  This little family had a desire to eat several times a day.  As the mom of this family I figured out that if I didn't plan for these meals .....chaos would ensue.

I had lots of things to do but meals and laundry were always upon me.  It took a while for me to get a handle on this world of the "dailies" but eventually I got there.  I've done lots of different "plans" through the years but one of the best things I've done is to learn a few quick and easy recipes that I can put together without much fuss.  It's important to have the ingredients "just laying around" so those mad dashes to the store become fewer and fewer.

Here are a couple recipes I've used for years.

Sweet and Spicy Chicken:  Cut chicken breast into small pieces and roll in taco seasoning mix.  Brown chicken in hot oil.  Drain oil and add a small jar of salsa and half of a small jar of peach preserves.  Heat and Serve Over rice.  You can find this and other easy recipes at http://www.tasteofhome.com/recipes

Ham and apples.  Take a ham steak and lay in a pan.  Pour a can of pie slicing apples or a can of fried apples.  You may want to sweeten the apples if they aren't already.   Bake for 30 minutes at 350.  We also eat it with rice but it would work with potatoes or macaroni and cheese.

One of the all time favorites at our house is oven beef stew.  This is another easy one.  Take a equal amounts of beef stew meat, slice potatoes and baby carrots.  Add a packet of dry onion soup mix, a can of cream of mushroom soup and 1 soup can of water.  Mix and cover with foil.  Cook for 4 hours at 275 checking it once or twice during cooking time.
